• Ingredients:
• 1 block (7oz) Feta cheese
• 2 cups Cherry tomatoes
• 2 cups Fresh spinach
• 2 cups Whole wheat or chickpea pasta (cooked)
• 1 tbsp Olive oil, salt, pepper, and dried oregano
• Instructions:
1. Preheat your oven to 400°F (200°C).
2. Place the block of feta in the center of a baking dish and surround it with cherry tomatoes.
3. Drizzle with olive oil and sprinkle with seasonings.
4. Bake for 30 minutes until tomatoes are bursting and feta is soft.
5. Add the cooked pasta and fresh spinach directly to the dish. Stir everything together until the feta turns into a creamy sauce and the spinach wilts. Serve immediately!
